The Dorset Soft Salami is a soft spreadable, ready-to-eat, ambient pate-style salami inspired by Ventricina from the Abruzzo region of Italy. Capreolus have filled their salami into hog casing which is smaller than the Italian version. Treat it like a pate and spread it onto toast or use it as a base for a delicious pasta sauce. It could be used in many ways for your seasonal canapes.
The flavour is round, meaty and somewhat sweet with a hint of orange and a complex blend of herbs. It is slightly peppery but not hot.
The Dorset Soft was the winner of Champion Cured Meat 2018 at this years Taste of the West Awards. The judges said "An incredibly versatile salami. Spread it on bread or crackers - or eat it off the spoon! Packed full of flavour with delicious fennel notes. A highly innovative, utterly delicious rather moreish little fellow!"
The Dorset Soft Salami is made by hand using natural casings so weight and size may vary from salami to salami. You will never be sent less than 100g.
