Inspired by the flavours of Italy, this free-range pork salami is seasoned with salt, sweet wine and fennel. It's got a natural beef casing before being fermented and air-dried. The fennel flavour comes through first - followed by a gentle tingle from the chilli at the end; it makes an excellent snack all on it's own, but can also be added to a charcuterie platter.
