Tasting Note: Refreshing Spanish white that has spent time on lees (the remains of the fermentation process) for extra texture; this is balanced and appealing, with flavours of green apple, pineapple and a burst of citrus.
Food Matching: A very pleasing match with shellfish, white fish and mushroom risotto.
Vineyard: Rocky soil with slate, quartz and clay. The Vineyard sits between 450 and 700 meters above sea level, with very little rain, strong winds and a lot of sun. The fruit is harvested at night and managed in as sustainable way as possible reducing the necesity for excessive spraying treatments. Bodegas Care also support the local consveration areas and national parks to help enrich the region's ecosystem and biodiversity
Vinification: CARE is a manifestation of the old Roman word for the region of Carinena, but also the fact that these are the hand made wines of the bodegas receiving extra special attention and care. A blend of 50% Garnacha Blanca and 50% Chardonnay fermented in stainless steel and then aged on lees to give volume and texture in the mouth
