In 1964 Gaspar Perelló opened a stall in Barcelona’s famous Boqueria Market to sell the local Arbequina olives; his range grew, as did his reputation, and soon expanded to include some of the best olives from all over Spain.
These olives have a mild, gently bitter flavour which harmonises well with the spicy marinade, which gets its heat from chopped pieces of pickled guindilla chillies.
Ingredients: Water; green pitted olives; chilli (sulphites); salt; flavour enhancers: monosodium glutamate and disodium ribonucleotides; acid: citric acid; antioxidant: ascorbic acid. For allergens, see ingredients in bold. May also contain traces of almonds and fish.
