Every maker we can name.
Twenty-six names, and an honest account of how well we know each one.
This is the working index behind the one rule: if we can’t say who made it, it doesn’t go in the box. Some of these we buy from directly — the farm, the brewery, the chocolate maker. Some reach us through specialists whose whole job is knowing a country’s producers. And some are on our shelves under their own name with the route between us and them not yet confirmed in writing. All three are marked, so you can tell which is which.

How to read this list.
Knowing where food comes from isn’t one thing, it’s four — and the fourth is admitting you don’t know yet. We’d rather show you which of the four each name is than flatten them all into the same word.
Bought direct
We buy from the people who make it. The name on the jar is the name we deal with.
Through a specialist
We buy from a house that knows a country’s producers far better than we do. We name the house; what the label says varies with the line.
Route not confirmed
This is the name the food is on our shelves under. Whether that’s who makes it or who it reaches us through isn’t confirmed in writing, so we don’t claim either.
Not yet named
Some of the shelf isn’t traced to a person yet. It stays blank here until it is.

A working list, not a finished one. It gets longer as each name is confirmed, and never before.

Traced as far as we can honestly trace it.
This one reaches us through Moreno. So we can tell you who put it on our shelf, and the label tells you the estate that made it — which is two of the three things worth knowing.
The third is the vineyard, and we haven’t stood in it. When we can say more, we’ll say it here. That’s the whole method: write down what’s true, leave the rest visibly empty, fill it in when it’s confirmed.
What we can’t tell you yet.
Twenty-six names is an honest list. It isn’t the whole shelf. Not everything we sell arrives with a maker’s name attached to it, and some of what does, we haven’t had confirmed in writing.
The easy thing would be to write a village and a founding date next to each one and hope nobody checks. We’d rather leave the line empty. An invented provenance is worse than a missing one, because it makes every other line on the page worth less.
This is what a blank looks like here. It fills in, or it stays a blank.
If you make something good, tell us about it.
This list is how we buy, and it has room in it. If you make something and you think it belongs in a hamper packed in Sussex, write and tell us what it is, where you make it, and how much of it you can make.
