Fermentation takes place directly in French oak barrels, followed by ageing without pump-overs, bâtonnage, or lees stirring, Cádiz sunshine already provides the grapes with natural body and strength, and the goal is to protect their freshness. The result is a creamy, elegant wine that pairs beautifully with white prawns, clams in tomato sauce, meagre in almond sauce or rockfish.
