In 1964 Gaspar Perelló opened a stall in Barcelona’s famous Boqueria Market to sell the local Arbequina olives; his range grew, as did his reputation, and soon expanded to include some of the best olives from all over Spain.
Pitted green Manzanilla olives and black Cuquillo olives with stones, combined with pickled silverskin onions and baby gherkins in a spicy marinade spiked with pickled guindilla chillis.
Ingredients: Water; green pitted olives; black unpitted olives; gherkins (sulphites); silverskin onions; chilli (sulphites); salt; flavour enhancers: monosodium glutamate and disodium ribonucleotides; acid: citric acid; antioxidant: ascorbic acid.
